Notes:
The all-time favorite dish and the most searched for recipe on this site. This is not a true bolognese sauce, but a variation that is used anywhere north of Italy. I tend to prepare huge amounts and freeze what I don't eat. This will give you a not too salty bolognese with a very slight sharpness to it. If you like your food hot, add more of the chili paste. Also, some people like more garlic in their sauce, so feel free to add more.
Ingredients for 2:
2 ¼ cups chopped tomatoes
5 ¾ oz beef mince
1 onion onion (medium size, 160g each)
2 tablespoons tomato concentrate
1 ¼ teaspoon honey
1 ¼ clove fresh garlic (medium size, 3g each)
1/4 teaspoon salt
1/2 teaspoon hot chili paste
1/4 teaspoon paprika
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 ¼ fl. oz olive oil
1 ¼ fl. oz red wine
1 splash Worcestershire sauce
Salt content: 0.2% (by weight, not counting salt in other ingredients)
Ingredients for 4:
4 ½ cups chopped tomatoes
11 ¾ oz beef mince
2 onions onion (medium size, 160g each)
4 tablespoons tomato concentrate
2 ½ teaspoons honey
2 ¾ cloves fresh garlic (medium size, 3g each)
3/4 teaspoons salt
3/4 teaspoons hot chili paste
3/4 teaspoons paprika
2 teaspoons dried oregano

Ingredients for 6:
6 ¾ cups chopped tomatoes
1 1/8 lb beef mince
3 onions onion (medium size, 160g each)
6 tablespoons tomato concentrate
1 ¼ tablespoon honey
4 cloves fresh garlic (medium size, 3g each)
1 teaspoon salt
1 ¼ teaspoon hot chili paste
1 teaspoon paprika
1 tablespoon dried oregano
1 teaspoon ground black pepper
4 fl. oz olive oil
4 fl. oz red wine
3 splashes Worcestershire sauce
Salt content: 0.2% (by weight, not counting salt in other ingredients)
Procedure:
Peel and chop the onions. Pour the olive oil into a sizable saucepan, heat it and fry the onions until translucent. Add the mince and fry until the mince is brown and crumbly. Now add the wine, Worcestershire sauce, spices, tomatoes, squeezed garlic, chili paste, honey and tomato concentrate. Simmer for at least 45 minutes, or, if you have the time, for 2 hours.
