The Shores: Prime New York Steak with Maple Chili Marinade Recipe

Serves: six

Maple Chili Marinade Ingredients:
3/4 cup scallions, finely chopped
1/3 cup dark rum
1/3 cup maple syrup
1/4 cup sherry wine vinegar
2 Tbsp. olive oil
2 Tbsp. Worcestershire
2 Tbsp. grated ginger
1 Tbsp. chili sambal sauce
1 Tbsp. thyme, chopped
1/2 tsp. hickory smoked liquid
2 cloves garlic, crushed

Steak Ingredients:
6 Prime New York Steaks, 2 inches thick cut, 10 to 12 ounces each

Procedure:
  1. Combine all "Maple Chili Marinade" ingredients in food processor. Process until smooth.
  2. Place steak in non-reactive shallow dish. Marinate steaks in maple chili marinade for 30 minutes at room temperature (turning occasionally).
  3. Remove from marinade. Reserve remaining liquid.
  4. Grill 3” above hot coals, basting with reserved marinade (if used) until desired doneness.
  5. Let stand 3 to 5 minutes.
