Spanish Tomato Sauce - Chef Ethel Pangborn

Ingredients:
6 ripe tomatoes
½ onion, chopped
½ green pepper, chopped
½ teaspoon thyme
2 Tablespoons oil
1 Tablespoon vinegar
Salt to taste

Procedure:
1) Peel 6 tomatoes and cut them up finely with a knife. Put in large pot.
2) Add onions finely cut up, finely chopped peppers, and a small quantity of thyme.
3) Mix everything together and add a bit of salt, oil and vinegar.
4) Simmer slowly for 30 minutes.
5) This is a very tasty sauce for boiled meats or whatever.
