Rub Seasoning for Chicken Recipes

Ingredients:
2 Tbs. olive oil
2-1/2 tsp. kosher salt
1 tsp. chili powder
1 tsp. sweet paprika, preferably Hungarian
1 tsp. light brown sugar
1 tsp. chopped fresh thyme
3/4 tsp. freshly ground black pepper
1/4 tsp. chipotle chile powder
1 clove garlic, minced

Procedure:
Rub all over the chicken and between the breast meat and skin. Cover and refrigerate for up to 24 hours or let sit at room temperature for 30 minutes.

Notes:
1. Rubs are seasoning blends applied to the surface of meats.
    These quick mixtures add flavor to meats, but do not tenderize.
2. Dry rubs consist of herbs, spices and other dry seasonings.
3. Paste-type rubs, which are perfect for roasts, contain small amounts of wet ingredients, such as oil,
    crushed garlic or mustard.
4. Rubs can be applied just before cooking or up to two hours in advance.
    Just refrigerate treated meat until cooking time.
5. Simply combine the ingredients and apply evenly to all sides. Cook meat to necessary doneness.
