Opa: Greek Ceviche Recipe

Ingredients:
2 pounds fresh fluke filet, medium diced
1/2 cucumber, finely diced
1/2 red onion, finely diced
1/2 red pepper, finely diced
1/2 small tomato, diced
1/2 cup seedless red grapes, chopped
3 lemons, juiced
2 tablespoons kosher salt
1 tablespoon olive oil

Procedure:
Combine all ingredients in a large bowl. Cover and refrigerate for 2 hours until the fish is opaque and somewhat firm.
