10 Arts: Apple Cider Vinaigrette Recipe

Serves: 4

Ingredients:
Apple Cider Vinaigrette:
1 tablespoon whole grain mustard
1 tablespoon apple juice
1/2 tablespoon cider vinegar
1/2 cup canola oil
Salt and pepper, to taste

Roasted Apples:
1 honey crisp apple, peeled, cored, larger diced
1 tablespoon canola oil
1 tablespoon brown sugar
Salt, to taste

Salad:
2 cups mustard greens
6 cups mesclun
1 cup apple cider vinaigrette (see recipe to left)
1 cup roasted apples (see recipe to left)
1 cup walnuts, lightly toasted
Raw apple slices, for garnish

Procedure:
For the Apple Cider Vinaigrette:
Combine the whole grain mustard, apple juice, and cider vinegar. Then whisk in canola oil and add salt and pepper, to taste.

For the Roasted Apples:
In a sauté pan, add canola oil over medium heat. Then, add the apples and sauté until tender. After they are brown, add brown sugar and a pinch of salt, and remove from heat and cool.

For the Salad:
Combine all ingredients in large mixing bowl, served with some sliced raw apples for garnish.
