Makes 12 sandwiches
Notes:
Start by grilling small steak tournedos, add sautéed mushrooms and some herbed cream cheese, and serve on miniature toasted brioche buns.
Steak Tournedos, 2oz 12 ea
Kosher Salt and Fresh Pepper as needed
Mushroom Duxelle, recipe below 1 Cup
Herbed Cream Cheese, recipe below 1 Cup
Miniature Brioche Buns 12 ea, split
Watercress 12 stems, 1½” long
Mushroom Duxelle Ingredients:
Butter, Unsalted 3 Tbsp
Shitaki Murshooms, thinly sliced ¼ Cup
Crimini Mushrooms, thinly sliced ½ Cup
Oyster Mushrooms, thinly sliced ¼ Cup
Thyme, fresh, leaves only pinch
Sherry Wine 2 Tbsp
Kosher Salt pinch
Black Pepper, freshly ground pinch
Herbed Cream Cheese Ingredients:
Cream Cheese, softened 8 oz
Garlic, finely chopped 1 tsp
Lemon Juice, fresh 1 tsp
Parsley, chopped 2 tsp
Tarragon, fresh chopped 2 tsp
Basil, fresh chopped 2 tsp
Oregano, fresh chopped 1 tsp
Black Pepper, ground 1 tsp
Sandwich Procedure:
1. Pre-heat a charcoal or gas grill.
2. Pre-heat the oven to 350 degrees.
3. Season the tournedos with salt and pepper.
4. Grill the tournedos in the hottest part of the grill for two minutes per side, until caramelized on the exterior with an interior doneness of medium.
5. While the tournedos are cooking, place the split brioche in the oven to toast.
6. Once the brioche buns are golden brown, remove them from the oven and spread a layer of herbed cream cheese on each side
7. Place the warm mushrooms on the bottom halves of the buns. Place one tournedo steak on top of the mushrooms, and place the top bun on the sandwiches.
8. Place the sandwiches on a hot plate, garnish with watercress and serve immediately.
Mushroom Duxelle Procedure:
1. In a large sauté pan, melt the butter and add the cleaned, sliced mushrooms. Sauté over medium heat, sweating the natural juices from the mushrooms. Once mushrooms begin to wilt, add the sherry, thyme, kosher salt and pepper and stir well to combine.
2. Continue to cook over medium heat until the sherry and natural juices from the mushrooms have reduced. The pan should be nearly dry.
Herbed Cream Cheese Procedure:
1. Place cream cheese in stainless mixer bowl and mix until smooth.
2. Add the garlic, herbs, and lemon juice and mix until evenly combined.
3. Allow to sit overnight prior to use.
