Red’s Eats: Lobster Roll Recipe


Ingredients:
2 fresh Maine lobsters
Top split roll, buttered and grilled
Extra heavy mayonnaise, if desired
Drawn butter, if desired

Procedure:
Boil salted water, cook lobsters for 15 minutes and then shut off heat, leaving covered for another 5 minutes. Pick out lobster meat and devein both tails. Pull tails into 2 sections each. Tear meat by hand...do not use utensils. Butter and grill roll until golden brown. Fill roll with torn body meat, knuckle and tail meat. Put one claw on each side of roll. Top with whole split tail. Serve with hot drawn butter and / or mayonnaise on the side.
