R & S Trainstop Restaurant: Sharon's Meatloaf Recipe


Ingredients:
4 lb. lean hamburger
1 box dry onion soup mix
1 can Rotel diced chilies and tomatoes
2 oz. Heinz 57 sauce
1 sm. diced onion, or fresh chives (about 1/4 c.)
2 oz. Worcestershire sauce
1 box saltine crackers
3 eggs, beaten
1/2 c. chopped bell peppers
3 strip bacon
Ketchup

Procedure:
Mix by hand the meat, soup mix, green chilies, tomatoes, onion, 57 sauce, Worcestershire sauce, crackers, eggs and bell peppers. Shape into a loaf and put into roasting pan. Put ketchup on top and then lay the bacon on top of the ketchup. Bake for 1 1/2 hours on 350°. Take out of oven and let set for 10 minutes before serving. No other seasonings are needed.
