Barcelona Restaurant and Bar: Smoked Paprika Aioli Recipe

Makes approximately 15 cakes

Ingredients:
Makes approximately 1 cup
1 egg yolk
¾ cup olive oil
1 t. sweet smoked paprika
½ t. Dijon mustard
2 T. sherry vinegar
½ t. kosher salt
1 t. lemon juice

Procedure:
Combine the egg yolk and mustard in a small bowl. Slowly whisk in the oil to emulsify into a mayonnaise. Season with the paprika, vinegar, lemon and salt.
