4 small sweet potatoes (about 2 pounds total)
3 tablespoons unsalted butter, softened
2 scallions, finely chopped
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon salt

Put racks in middle and lower third of oven and put a sheet of foil on lower rack to catch any drips.
