Ingredients:
1 cup whole wheat flour
2 cups oats
1/2 tsp sea salt
2 tsp cinnamon
1 tsp baking soda
3 mashed banana
1 cup plain non-fat yogurt
2 eggs
1/4 cup honey
1/4 cup canola oil
2 tsp vanilla extract
3/4 cup chopped walnuts
Procedure:
Preheat oven to 350 degrees. Mix together the dry ingredients and set aside. Mash bananas and add the rest of ingredients in large bowl and incorporate well. Mix dry ingredients into wet until just blended. Place in greased muffin tins or use paper liners. Sprinkle with a touch of cinnamon sugar if desired. Bake 25 minutes or until inserted toothpick comes out clean. Make 12-15 muffins.
