Ingredients:
Freshly ground black pepper
Kosher salt
4 oz baby spinach leaves (wash and dry the spinach leaves
6 oz crumbled blue cheese
2 tbsp toasted pinenuts
1 tbsp snipped fresh chervil (you can also use chives instead)
3 tbsp olive oil
1 medium red onion. Peel and slice the red onion into 10 wedges while leaving the root intact
1 tsp honey
2 tsp dijon mustard
3 tbsp sherry vinegar
Directions:
Heat up a medium saute pan over medium heat
Add olive oil to the saute pan
Add red onions
After the red onions start to turn golden (this should take about 5 minutes). Add the dijon, honey, and sherry vinegar
Add some salt and pepper to the mixture
Place the spinach in a bowl and pour the hot onions over the top
Mix the spinach
Top the spinach and red onions with blue cheese, chervil (or chives) and pine nuts
