The Ritz-Carlton Lodge: Hummus - Chef Jason Cates


Ingredients:
1 pinch cumin
Half of a 16-oz. can of garbanzo beans
¼ cup tahini paste
1 tablespoon lemon juice
Tap water to correct consistency
2 pinches salt and pepper

Procedure:
Toast the cumin in a pan. Puree the toasted cumin, garbanzo beans, tahini paste and lemon juice in a blender. Adjust the consistency with water and season with salt and pepper.
