Cape Cod Baked Scallops with Lime Recipe - Chef Rich Vellante


Serves: 4

Ingredients:
2 pounds sea scallops (fresh or thawed from frozen)
1/4 cup chopped fresh basil
1 teaspoon grated lime or lemon peel
1/2 teaspoon cumin
1 tablespoon extra virgin olive oil
1 tablespoon freshly squeezed lime juice
1½ teaspoons kosher salt
Black pepper, to taste
1/2 cup white wine
3/4-1 cup Italian bread crumbs
2 tablespoons olive oil

Procedure:
Preheat the oven to 400 degrees. Rinse the scallops and pat them dry. Remove and discard each "foot" (the little tough piece on the side of each scallop). Put the scallops in a glass or ceramic bowl and toss with the basil, lime or lemon peel, cumin, olive oil, lime juice, salt and pepper.
Place the scallops in a baking dish.

Sprinkle the wine over the top of the scallops. Lightly cover the scallops with the bread crumbs. Drizzle the olive oil over the top. Bake for 20 to 25 minutes, until the scallops are cooked through and the tops are nicely browned.
