Honey Walnut Prawns Recipe - Chef Tomm

Ingredients:
3 tablespoons Mayonnaise
2 teaspoons Honey
2 teaspoons Sweetened condensed milk
1 teaspoon Lemon juice
8 ounce Jumbo shrimp
1 whole Egg white
1/4 cup Corn Starch
8 piece Candied Walnuts
2 cups Oil For frying
1 tablespoon Green onion sliced thinly For garnish

Candied Walnuts:
1 cup Water for rinsing
1/4 cup Walnut halves
1/2 cup Sugar
1/2 cup Water

Procedure:
Place the mayonnaise, honey, sweetened condensed milk and lemon juice in a bowl and mix well.  Put sauce aside for later use.  Peel and devein the shrimp then place in a small bowl.  Add the egg white and mix until fully incorporated.  Add in the cornstarch until fully covered and deep fry at 350 degrees until golden brown.   Remove the shrimp from the fryer and drain on paper towels.  Toss the shrimp into the sauce with the candied walnuts.  Place in a serving plate and garnish with green onions.  Serve.

Candied Walnuts Instructions:
Place walnuts in a bowl and cover with one cup of water.  Gently stir the walnuts around to get any debris off of them and let them soak for a few minutes. In a small sauce pan add the sugar and water and bring to a boil.  Place the walnuts in the solution and let boil for about five minutes.  Deep fry the nuts until golden brown.  Place on a sheet pan with parchment paper and let cool.
