The Cheesecake Factory: Chicken Madeira Recipe

Ingredients:
1 Tablespoon olive oil
4 chicken breasts, boneless
8 stalks of asparagus
4 servings of mozzarella cheese
Sauce Ingredients:
2 Tablespoon olive oil
2 cups fresh mushrooms cut
3 cups Madeira wine
2 cups of beef stock
1 Tablespoon butter
¼ Teaspoon fresh black pepper ground
Procedure:
Using plastic wrap, cover the chicken and pound it down to ¼ inch of thickness. Next dust the breasts with salt and pepper. Then using a medium sized frying pan heat 1 tablespoon of oil under a medium-high heat setting. Cook the chicken breasts for 4-6 minutes on each side until slightly brown and done. After the breasts are cooked, they can be kept warm in foil while making the sauce. Using the same pan add oil and mushrooms, cooking for just 2 minutes. Add wine, butter, pepper and beef stock. Heat the sauce to a boil then lower heat and simmer for 20 minutes. The sauce will be thick and brown. Boil and blanch the asparagus while the sauce is simmering. Heat the oven to broil. Using a baking dish, arrange the chicken on the bottom. Next, place 2 stalks of asparagus over the top and cover with cheese. Cook until the cheese has melted, then serve with 3-4 tablespoons of the sauce.
