Ingredients:
4 medium potatoes
1 onion diced
2 celery sticks
1 carrot
1 parsnip
1 turnip
2 tbsp oil
2 tsp sugar
2 tsp salt (optional)
5 cups water
2 ½ cups Milk
2 tbsp flour
Salt & pepper to taste
Procedure:
• Wash all vegetables and cut up roughly into pieces
• Add oil to saucepan on medium heat, add vegetables, stir without browning
• Add sugar, salt and water
• Boil gently for 1 hour until tender
• Rub through sieve or use a blender to get a fine consistency
• Blend flour with a little cold milk, return with remainder of milk and vegetable pulp to saucepan on stove
• Stir until comes to the boil for 1 minute
• Season to taste
• Serve with hot crusty bread rolls or croutons and chopped fresh parsley
