Hyatt Regency Hotel: Red Pepper Marinated Duck Breast Recipe

Serves: 4

Ingredients:
3 each Red Bell Peppers, Juiced
1/4 cup Cilantro, Roughly Chopped
1 small Red Onion, Roughly Chopped
4 each Boneless Duck Breast
2 Garlic Cloves, Whole

Procedure:
Combine red pepper juice, cilantro, garlic and red onions. Add duck
breasts, cover and refrigerate overnight. Remove duck breasts from
marinade. Salt and pepper the duck breasts and sear in saute pan with olive
oil over medium to high heat until golden brown. Finish duck breasts in
oven at 350 degrees to desired temperature.
