Pork Fajitas Recipe - Chef Billy Parisi

Makes 3-4 servings

Pork Fajitas Ingredients:
1 – 8 oz. pork tenderloin
2 tbsp. of olive oil
2 leaves of shredded green cabbage
1 ounce of shredded white cheddar
corn tortillas

Spanish-Style Dry Rub Ingredients:
3 tbsp. salt
1 tsp. oregano
1 tsp. chili powder
1 tsp. cumin
1 tsp. crushed red pepper flakes
1 tbsp. onion powder
1 tbsp. garlic powder

Pork Fajitas Salsa Ingredients:
2 mangos, peeled and diced
1/2 sweet onion, diced
3 tablespoon green onions, chopped
1/2 red bell pepper, diced
1 Jalapeno, peeled and chopped
3 tbsp. fresh cilantro, chopped
juice of 1 lime
Kosher salt and fresh cracked black pepper to taste

Spanish-Style Dry Rub Procedure:
In a medium size bowl, simply mix all dry seasonings and herbs together and set aside.

Pork Fajitas Procedure:
Rub the pork down on all sides with the Spanish seasonings and place it in a medium size sauté
pan on high heat with 1 tablespoon of olive oil and sear it until is brown on all sides and medium
to medium-well in the center.

Pork Fajita Salsa Procedure:
While the pork is cooking mix together mangos, onions, peppers, cilantro, lime, salt, pepper and
set aside.
Once the pork is finished slice it very thin.

Plate Pork Fajitas Procedure:
Place a few slices of pork on the corn tortilla along with a little bit of cabbage, mango salsa and
cheddar cheese.
