Makes: 4-6 entrée portions
Ingredients:
1 lb cooked Nova Scotia lobster meat - roughly chopped
2 tbsp mayonnaise
1 tbsp chives - chopped
1 tbsp grainy mustard
1 lemon - juice and zest
Salt & pepper to taste
4 to 6 split-top hot dog buns
3 to 4 tbsp soft butter
Procedure:
In a medium bowl combine all ingredients until well blended.
Set aside in refrigerator.
Lightly butter both sides of hot dog buns.
Heat skillet to medium high and toast buns until golden brown, about 1-2 minutes per side.
Stuff toasted buns with chilled lobster mixture.
Serve immediately.
