Maple Chili Marinade Ingredients:
3/4 cup scallions, finely chopped
1/3 cup dark rum
1/3 cup maple syrup
1/4 cup sherry wine vinegar
2 Tbsp. olive oil
2 Tbsp. Worcestershire
2 Tbsp. grated ginger
1 Tbsp. chili sambal sauce
1 Tbsp. thyme, chopped
1/2 tsp. hickory smoked liquid
2 cloves garlic, crushed
Steak Ingredients:
6 Prime New York Steaks, 2 inches thick cut, 10 to 12 ounces each
Procedure:
- Combine all "Maple Chili Marinade" ingredients in food processor. Process until smooth.
- Place steak in non-reactive shallow dish. Marinate steaks in maple chili marinade for 30 minutes at room temperature (turning occasionally).
- Remove from marinade. Reserve remaining liquid.
- Grill 3” above hot coals, basting with reserved marinade (if used) until desired doneness.
- Let stand 3 to 5 minutes.
