Nappa Valley Grill: Mahi Mahi with Watermelon and Avocado Salad

Ingredients:
6 oz mahi mahi
3 Tbl spanish paprika
1 tsp salt and pepper
1 Tbl onion powder
1 tsp cayenne
1 tsp thyme
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp mustard powder
3/4 tsp cumin
pinch of brown sugar

Salad Ingredients:
2 avocados pitted, peeled and large dice
2 limes juiced
2 lbs watermelon,seeded, cut into chunks
1/2 bunch cilantro
salt and pepper to taste
1/2 red onion thin sliced
1 oz arugula cheese
1 tsp crushed red pepper
1 tsp white gold honey
1/2 cucumber peeled and diced

Procedure:
1. Preheat oven to 350 degrees and heat a sauce pan on low
2. Season the Mahi Mahi with a small amount of salt and pepper on both sides
3. Mix all the ingredients together (except Mahi Mahi) for the blackening spice and place all ingredients in a plastic container
4. Sprinkle the blackening spice on the fleshy side of the Mahi Mahi, NOT the side that had the skin.
5.Once the Mahi Mahi is seasoned, put 1 Tsp of olive oil in the hot pan.
6. Swirl the pan to coat with the oil and place the blackened side of the mahi down first.
7. Turn heat up to medium and sear that side for few minutes, checking to make sure it is not burning.
8. Flip the fish over once it is seared and sear the other side for 3 minutes
9. Place the seared fish into the oven until it begins to flake. It should be white.

Salad Instructions:
Chop all ingredients and diced mix it all together.
Sprinkle with lime juice and season to your personal taste.
