Ingredients:
Chick Peas, cooked 2 cup
Olive oil 1 oz
Onions small diced 5 oz
Garlic cloves split in half 12 each
Parmesan grated 2 Tbsp
Egg Yolk 2 each
Lemon Juice 1 each
Panko 2 Tbsp
Ground black pepper 1/2 tsp
Kosher salt 1 tsp
Procedure:
Sauté the onions and garlic until soft in the olive oil.
Mash the onions and garlic with the chick peas into a paste with a mortar and pestle.
Fold in the remaining ingredients. Make a small cake to fry and check the seasoning.
Shape into cakes and dust with flour.
Fry in olive oil until light golden brown, serve immediately.
