Chef’s Table: Truffles Recipe



Ingredients:
1 Qt. Cream, Heavy Whipping
4 TBSP Butter
4 TBSP Sugar
2 Lbs. Morsels, Chocolate, Semi-Sweet prefer Nestles (9oz.)
½ C Cocoa Powdered
½ C Sugar, Powdered

Procedure:
1) In a 4-Qt sauce pan combine cream, sugar & butter. Bring to boil.
2) In a clean mixing bowl place chocolate chips. Pour Step#1 over chocolate chips while stirring constantly. Finished product will have a shiny gloss.
3) Needs to be cooled overnight.
4) Scoop into ½ oz. balls, then roll into cocoa powder or powdered sugar or chopped nuts.
